Lemon Rosemary Salmon



I wasn't able to post yesterday but here is my Lemon Rosemary Salmon with wild rice, grilled asparagus and mushrooms. All four of my kids love this dinner!



I buy frozen Salmon, it's helpful for me as a mom so if I mix up what I want to make for the week it keeps. I thaw out the pieces in a big bowl of cold water. The fish thaws in about 20 mins or less.



While the fish thaws I cut up the veggies that I'm going to be using. I chop off the bottom 2'' of the asparagus.


I also slice up the lemon. I cut enough slices to put on each piece of fish and use the ends for the asparagus. 


I make Near East Wild rice. My kids love it! I have to use two boxes to feed everyone. I don't follow the directions. I use half the water and replace it with Chicken broth. I don't add the oil or butter since I use the broth. I do follow the cooking instructions.



Once the Salmon is thawed I put it in tin foil on top of a little olive oil, season with pepper, sea salt, onion and garlic powder, juice from the lemon slice and rosemary. Then I fold up the sides.


Here is my mixture for my mushrooms which I put on skewers and used a silicone brush to keep them from drying out. I used the same seasonings as the fish.



For the Asparagus I make a boat with the foil (like the fish) and use olive oil, a little garlic salt and pepper and the juice from the ends of the lemon. *I forgot to take a picture :( 




Like I've said in my earlier post I don't really measure seasonings. The pictures are a pretty good representation of much I sprinkle on . I grilled everything on med-low heat and cooked through. Total time was about 40 mins.

  2. Of Course! It is so yummy and we love having company over to share food. I feel like food is a universal language people come together around food.
